Healthy sides for Fried fish: Mint sauce and Zucchini

Jump to recipeTo simplify some evenings, I like to customize a piece of ready-made meal: in this case fried fish cod.
As it is fried, healthy side dishes and sauce should incorporate some acidity to balance out the flavor. In terms of textures, you go your crunch covered, so it is necessary to add some creaminess and unctuosity to bind elements together.
To me, freshness means mint and lemon. Did you know that you can add mint to savory dishes? You need quite a light hand, but it creates a subtle refreshing taste. As only very little quantity needed, I found keeping some dried leaves at home is very convenient. I bought mine from the tea section of my supermarket! I thought to use it both in the sauce for the cod as well as with the zucchinis to create harmony between the elements.
Mint has quite a subtle taste. So light healthy side green vegetables such as zucchinis per well together. I finished with some depth with feta cheese with is still quite an acidic cheese. Feta is a very versatile cheese to have in your fridge: as a topping on a dish, salad or a soup, it also melts perfectly when cooked.

Ingredients
- 2 ready-made pieces of fried cod
- Half a lemon
- Half a cup or 100 gr of Greek yogurt
- 3 tablespoons of olive oil
- 3 tablespoons of dried mint
- 3 Zucchinis
- Half a cup or 100 gr of Feta cheese
Instructions
• Cook your ready-made fried cod as per cooking instructions (I put mine 10min in the air fryer)
• Chop finely the side zucchinis and add to the sauté pan with 1 tablespoon of olive oil and the feta. The feta will melt into a very simple sauce.
• Sprinkle 2 tablespoons of dried mint (you can add more or less to taste)
• Prepare the sauce by combining Greek yogurt, lemon, 2 tablespoon of olive oil, and salt pepper to taste. Add 1 tablespoon of dried mint.
