Want to try something new for your usual dinner? Look at the versatile grain-like seed - quinoa. Full of proteins and fibers, quinoa lets you move away from the usual rice, letting you make a new version of the traditional egg fried rice. Let's call it Quinoa Egg Fried "Rice".

Making the most of quinoa needs knowing how to cook it well. Its outer cover, called the saponin, can sometimes give it a bitter taste. But don't worry! Just rinse it under cold water to get rid of the bitterness. Keep in mind: a 1:2 ratio of quinoa to liquid is the key to a fluffy, perfectly cooked portion of this healthy rice substitute. Cook it in vegetable broth or a little sea salt to bring out its gentle nutty taste. Let it simmer slowly, with the lid on, for about 15 minutes. Being patient, dear cook, is the secret ingredient here. Wait until the quinoa has taken in all the liquid, then take it off the heat, stir with a fork, and let it sit under the closed lid. The result? Light, fluffy grains!

The great thing about this dish is not just its amazing nutrition, but also the freedom it gives you as the cook. Ingredients

Cooked quinoa

Firm tofu

1 egg per person

Some soy sauce

A drizzle of olive oil or sesame oil

Mixed vegetables (I chose kale and sweet potatoes)

Salt and pepper to taste

Optional garnishes: sesame seeds, green onions, hot sauce

Instructions

Start by preparing your tofu - the protagonist protein of this culinary tale. Cut it into cubes and lightly pan fry until golden brown. Set aside.

Heat oil in a large wok or frying pan over medium heat. Add your choice of vegetables, stir-frying until they've achieved the perfect crunch – tender yet full of life.

In the same pan, push the vegetables to one side, making room for the eggs. Crack them open, allowing them to dance and sizzle, scramble until just cooked. Now the star of our dish - the cooked quinoa. Add it to the pan, combining with the other ingredients. Drizzle the soy sauce, allowing it to waltz through the pan, uniting the flavors. Return the tofu to the pan with the other ingredients

Season with salt and pepper, tasting and adjusting accordingly. Remember, you are the maestro of this flavor orchestra. Feel free to add a dash of hot sauce or sprinkle of sesame seeds. Top with freshly chopped green onions for that final crunch.
